Dinner in a Pumpkin
1 1/2 lbs Ground Beef or Turkey
1 cup Celery, diced
1 cup Green Pepper, diced
1 tsp Salt
1/4 tsp Black Pepper
1 cup Freshly Mushrooms, sliced
2 tsp Soy Sauce
1 pkg Long Grain Wild Rice, prepared according to directions
2 cans Cream of Mushroom Soup
1 cup Milk
1 can Sliced Water Chestnuts, drained
1/4 c Butter, melted
1 medium Pumpkin, topped and cleaned out
Salt and Pepper, to season

Pre-heat the oven to 350 degrees.

In a large pot or kettle, over medium heat, brown the beef, celery, onion and bell pepper; season with salt & pepper.

Add the mushrooms and soy sauce and cook for a two minutes.

Add the rice, soup, milk and the water chestnuts and cook for a few minutes more.

Swirl the melted butter around the inside of the pumpkin, coating well and season the inside of the pumpkin with salt and pepper.

Spoon the meat mixture into the pumpkin and put the top of the pumpkin.

Place the filled pumpkin on a cookie sheet and bake for 1 1/2 to 2 hours or until done, depending on the size of your pumpkin.
