Strawberry Oatmeal Bars


Strawberry Oatmeal Bars

1 box (18 ounces) Yellow Cake Mix
2 1/2 Cups Quick Cooking Oats
3/4 Cup Butter, melted
2 - 2 1/2 Cups Strawberry Jam* or Spread
1 Tablespoon Water*



♥ Preheat the oven to 375 degrees and grease a 9 x 13 pan.

♥ In a large bowl, mix together the oats, cake mix and the butter, so that is makes nice clumps and there is no dry mix left.

♥ Press half of the oats/cake mixture evenly into the bottom of the pan, pressing them into the corners.

♥ In a separate bowl mix the water and the jam together.

♥ Spread the jam mixture evenly over the crust.

♥ Sprinkle the remaining oats/cake mixture of the top,
pressing down slightly.

♥ Bake in the middle of the oven for 18 to 23 minutes, or until the top is lightly browned.

♥ Cool before cutting into the bars.

Footnote:
I used a strawberry spread instead of a jam,
no need to use the water to thin it out.

Substitute lemon juice for the water.

Substitute raspberry for strawberry.

Substitute a lemon cake mix.

Drizzle powdered sugar or melted chocolate on the top.

I cut the bars out with a heart shaped cookie cutter.

I would also consider using parchment paper.
